I’ll admit that I’m not really one for recipes. I grew up with two parents who are both phenomenal cooks, and they kind of taught me to cook more with my senses rather than cookbooks. This isn’t to say that I can’t or don’t follow recipes from time to time, but I always end up turning them into my own thing!
That being said, I’m always looking to expand my palate’s horizons and try some new things, so I thought I’d share some of the recipes I’ve been bookmarking lately for some new winter dishes!
Vegetable Stew with Dill Rice
I eat a mostly plant-based diet, and this stew seems right up my alley. I think I’ll make dill quinoa instead of rice, though!
Spiralized Celeriac Pasta with Brussel Sprouts
I’m a big fan of veggie noodles as an easy way to indulge in my favorite pasta dishes without the gluten!
Olivia Wilde’s Bomb-Diggity “Bolognese”
This vegan bolognese looks so hearty! I love comfort food that’s healthy, too.
BBQ Tempeh
I’ve been loving tempeh lately, which has opened up a new world of recipes!
What’s on your plate this new year?
